The End of the Season Isn't Too Late To Try Something New

It's never too late to break a habit or routine and try something new, even at the end of the season.

Salmon is full of benefits for all areas of the body. It can help burn fat and may also improve brain and heart health. It's easy to build around as the core dish of the meal and is perfect to fuel up before a game.

This dish is perfectly portable and only needs a fork, perfect for carrying in tupperware and eating on the way to the rink. With under 30 minutes of cook time and six easy steps to enjoy, this is a quick recipe that hockey families can enjoy on the go without much change to the everyday schedule.

Caesar Spiced Salmon and Crunchy Dill Salad

with Sweet Bell Peppers and Garlic Rice

1. MAKE CROUTONS

Cut roll into 1-inch pieces. Peel, then mince or grate garlic. Whisk together half the garlic and 1 tbsp oil (double for 4 people) in a large bowl. Season with salt and pepper. Add bread pieces and stir to coat. Arrange bread pieces on a baking sheet. Toast in middle of oven, stirring halfway through cooking, until lightly golden, 5-7 min. (TIP: Keep an eye on them, so they don't burn!) (Use two baking sheets for 4 people).

2. PREP

While croutons toast, finely chop dill. Cut cucumber into 1/4-inch thick rounds. Halve tomatoes.

3. MAKE CAESAR SPICE & PREP SALMON

Combine celery salt, coriander and 1/4 tsp pepper (double for 4 people) in a small bowl. Pat salmon dry with paper towels, then sprinkle over Caesar spice.

4. COOK SALMON

In a cold, large non-stick pan, add the salmon, skin-side down. Then heat the pan over medium-high heat. Cook, until skin is crispy, 5-6 min. Flip the salmon over and continue cooking, until cooked through, 1-2 min.

5. MAKE GARLIC DRESSING

While salmon cooks, whisk together mayo, dill, vinegar, remaining garlic and 1 tbsp oil (double for 4 people) in the same large bowl. Set aside.

6. FINISH AND SERVE

Add croutons, cucumber, baby kale and tomato to the bowl with dressing. Toss to coat. Divide salad between plates and top with Caesar spiced salmon.
