A Rink-Ready Meal Even Your Kids Can Make

At this point of the season hockey families should have their routines down to a near science. Between school pickups, homework and leaving for the rink, there isn’t a lot of time to make sure that players are fed properly. That’s where HelloFresh can help.

The beef meatballs are mainly composed of protein that has all nine essential amino acids needed for muscle growth and maintenance. The combination of these nutrients gives players a filling, nutritional meal that translates to energy when on the ice.

This dish is perfectly portable and only needs a fork, perfect for carrying in tupperware and eating on the way to the rink. With under 40 minutes of cook time and six easy steps to enjoy the BBQ Beef Meatballs, this is a quick recipe that hockey families can enjoy on the go without much change to the everyday schedule.

BBQ BEEF MEATBALLS

with SMASHED POTATOES AND BROCCOLI

1. Cook Potatoes and Prep

Cut potatoes into 1/2-inch pieces. Combine potatoes, 2 tsp salt and enough water to cover (approx. 1 inch) in a large pot. Cover and bring to a boil over high heat. Once boiling, reduce heat to medium. Simmer, uncovered, until fork-tender, 10-12 min. Meanwhile, finely chop chives. Peel, then mince or grate garlic.

2. Make Meatballs

Combine beef, breadcrumbs, BBQ seasoning and half the garlic and half the chives in a large bowl. Season with salt and pepper. Roll beef mixture into 16 equal 2-inch sized meatballs. Transfer meatballs to a foil-lined baking sheet. Bake in middle of oven, until cooked through, 10-12 min.

3. Cook Broccoli

While meatballs bake, cut broccoli into bite-sized pieces. Heat a large non-stick pan over medium heat. When hot, add 2 tbsp oil, then broccoli, remaining garlic and 1/4 cup water. Stir together. Cook, covered, stirring occasionally, until tender, 5-6 min. Season with salt and pepper.

4. Mash Potatoes

When potatoes are done, drain and return them to the same pot, off heat. Using a masher, mash 2 tbsp butter and 1/4 cup milk into potatoes until smooth. Season with salt and pepper. Set aside.

5. Coat Meatballs

Whisk together broth concentrate, BBQ sauce and 1/4 cup water in another large bowl. Set aside. When meatballs are done, transfer to BBQ sauce mixture. Stir together, until meatballs are fully coated in the sauce.

6. Finish and Serve

Divide mashed potatoes between plates. Top with BBQ meatballs, spooning over any remaining sauce from the bowl. Sprinkle remaining chives over meatballs. Serve garlicky broccoli alongside.
