Warm Steak Salad

with Squash and Winter Greens

Hockey players know that the preparation before a game takes place hours before puck drop. It’s not just getting to the rink and putting your equipment on and stepping onto the ice – what you eat before a game matters. Making the smart, healthy choice of your pre-game meal can be the difference of feeling slow and sluggish on the ice to having that extra burst of speed on your breakaway.

HelloFresh brings healthy, easy-to-make meals to the kitchens of busy hockey families that come with step-by-step instructions. Knowing what you'll be making and how long it will take is information valuable to anybody as busy as a hockey parent by creating stress-free dinners for the week.

The steak is an excellent source of protein, a building block of bones and muscles. Squash is a key for the body to help process fats and carbs while packing a nutritional punch at the same time. The kale contains fiber, iron, antioxidants and calcium.

This dish is perfectly portable and needs minimal utensils, perfect for carrying in tupperware and eating on the way to the rink. With just 30 minutes of cook time and four easy steps to enjoy the Warm Steak Salad, this is a quick recipe that hockey families can enjoy on the go without much change to the everyday schedule.

1. ROAST SQUASH

Toss squash with 1 tbsp oil (dbl for 4 ppl) on a parchment-lined baking sheet. Season with salt and pepper. Roast in middle of oven, stirring halfway through cooking, until tender, 20-22 min.

2. PREP & MAKE DRESSING

While squash cooks, peel, then thinly slice shallot. Peel, then mince or grate garlic. Pat the beef dry with paper towels, then season with salt and pepper. Add half the vinegar, 1/2 tsp sugar and 2 tbsp oil (dbl both for 4 ppl) to a large bowl. Season with salt and pepper. Whisk to combine. Add kale and toss to coat. Set aside.
